Yes. Select all of the documents from your folder and upload as many documents as you need to create an e-signing documents package. Any new docs you upload later will be added to this package but the borrower will only be directed to sign any new ones.
Can I request e-signing on multiple documents at once?
You can add a signature field for each borrower on each document you want them to sign.
